Instant Pot – Tender Chicken Boobs 

Fork tender chicken boobs in the Instant Pot! Stupid easy and ready in 15 min! 

I used

 5 chicken breasts

Mrs Dash and garlic powder 

2 tbsp oil

2 cups vegetable stock 

Step 1

Turn Pot on to sauté 

Step 2 

Add oil to pot, sauté seasoned chicken breast in oil for about 2-3 minutes per side

Step 3 

Add vegetable stock to pot close lid and chose manual settings and set to 8 minutes. 

Let Pot natural release , serve! 

Beef Barley Stew – Instant Pot Recipe

My addiction to this machine is real! You can cook anything in it! Today I made a big batch of beef barley Stew and here’s how it went down. Turn the pot on to Sauté for about 20 min and add 1 tsp oil, then 1 package of Stew beef, making sure you brown all sides then remove and put on a plate 

Now add mushrooms to pot, adding a little more oil if needed 

Remove when well cooked. Now add 1 whole diced onion, 2 stalks celery and 2 large carrots – all diced 

Cook until onion soft and translucent. Now add back into the pot the beef and mushrooms. Turn the pot to slow cook for 1 hour. Add 2 cartons of beef broth, 1 tsp each of basil, thyme and garlic powder. Add 1.5 cups of pearl barley or pot barley. 

Once the time is up it will keep warm on the “keep warm” cycle. 

Vegan Shepard’s Pie – St Paddy’s Day Recipe 

This is yet another throw everything into a pan and make one hell of a good meal. 
In honor of St Paddy’s Day I brought out my inner leprechaun and made a classic favorite 
Stupid easy to make! Take 2 large russet potatoes, peel them and stab with a fork- microwave until cooked. Mash them up with some Earth Balance and soy milk.
While all that is going down, sauté 1/2 of a diced onion, add in 1/2 package of Gardein crumbles and a handful of frozen peas. Season with salt & pepper. Then add in your favorite vegan mushroom gravy ( I use a packet as I’m lazy and don’t make my own) . Let simmer until warmed thru  


Then top with the smashed potatoes 
Serve, eat and enjoy!

Vegan Lentil Veggie Soup – Crockpot! 

Cold days = Warm soups! 

Busy day at my house as I’m working all day and I want to come home to supper already made, so out comes my crockpot- my savior! 

This is such an easy soup to make and takes literally minutes to prep! 

Veggie Lentil Soup 

1.5 cups of dry lentils 

1/2 bag of little gems potatoes

2 stalks celery

2 large carrots 

1/2 onion 

1 can six bean medley mix (rinsed/drained)

1 28oz can diced tomatoes 

1 carton vegetable broth  

2tbsp each of garlic powder, cumin,chili powder 


Put lentils in bottom of crock, then add veggies except spinach!  

Cover with beans, tomatoes , spices and broth 

Cover and let cook on low for 6-7 hrs. 

Serve with a big hunk of bread and you got a meal! 


Vega Chunky Monkey Mocha Protein Overnight Oats

This breakfast has combined all my most favorite things ! 

I’m all about the easy peasy lifestyle and since fully giving up eggs for breakfast I need a hearty substitute and this fits the bill. Overnight Oats are so easy to prep and you can grab and go eat them . Here’s how this one came together . 

Take a large mason jar or mug ( I like my Vega Mug ) 

Add large flake oats to fill about 1/4 of the jar 

  Then add 1 tbsp of PB2 or a tbsp of nut butter 

  Add 1 scoop of Vega Mocha Protein powder  

 then add 1 tbsp of unsweetened cocoa , sliced bananas and top with almond milk or any non dairy milk 

  Stir and Put lid on container and let sit overnight in refrigerator . In the morning stir and top with coconut whip ! 


Yummo ! 


Stuffed Mushrooms – A Great Vegetarian Appetizer

I’ve been making this simple appetizer for years now and it’s always a favorite!


Buy a package of large mushrooms , remove stems and cut the stems up and put in a bowl.


Add to the mushrooms 1/2 to 3/4 cup of breadcrumbs , 1/2 cup of Parmesan cheese and then just enough Zesty Italian salad dressing to make it slightly moist


Place caps into a baking dish with just enough water to cover the bottom of the dish.
Take this mixture and spoon into the mushroom caps , sprinkle with more Parmesan cheese .


Bake at 400 degrees for about 15 minutes , drain water from dish and broil for about 2-3 minutes to crisp the tops .



Serve with a dish of Caesar dressing for dipping !

Unstuffed Lentil Cabbage “Rolls” – Vegetarian

This is a take on my cabbage roll recipe found here

These are meat free , full of fiber and supper yummy!

Here is the super simple recipe

Take 1 cup of dried lentils and simmer in 3.5 cups of water until all water is absorbed

Cut up 1 large carrot , 1/2 onion and 1/2 green pepper , add to lentils. Then add garlic powder , thyme , salt and pepper and Italian seasoning to mixture.


Add 1 can of tomato sauce and 1 tbsp of sugar to lentils


Cut up 1/2 head of cabbage , add to mixture and then add 1 can of diced tomatoes.



Cover and let simmer on low for about 35-45 minutes .

Serve with fresh warm bread !


LiveFit Program Phase 1 Day 2

Wow , yet another great day of lifting and eating ! I know it’s only been 2 days but I really like this program .
My day started out on the scale , I might as well check it right?


BOOM – down 2.6lbs in a day! I know it’s just water weight but I also know that eating clean is doing its job too.

Today was Back & Bicep day at the gym and here is what was on tap


Wide grip lat pull down @ 60lbs
1 arm DB row @ 25lbs
Seated cable row @ 45lbs
Underhand cable pull down @ 60lbs
DB alt bicep curl @ 15lbs
1 arm DB preacher curls @ 15lbs
Standing Bicep curls @ 15lbs

Now this doesn’t sound like much but I am keeping weight at about 65 – 70 % of my max weights , as prescribed by the program.

Now onto the eats today – it was a good eating day

Meal 1 – sweet potato, 1 chicken thigh

Meal 2 – BSN Syntha 6 protein shake, banana

Meal 3 – big salad with chicken and vine greats

Meal 4 – 2 eggs scrambled, 1/2 avocado, 12 almonds

Meal 5 – extra lean ground turkey meatballs, rice pasta , tomato sauce

Meal 6 – apples and earth balance PB

Here is a look at my meatballs


These are so easy to make- just take 1 lb extra lean ground turkey , Mrs Dash extra spicy blend , garlic powder, ketchup ( low sugar) , large flake oats onions & peppers ( frozen blend) , 1 egg and some Panko crumbs and mix in a bowl .
Spray a muffin tin with Pam , roll meat into balls and bake at 350 degrees for 30 minutes.

I made 6 big balls and I’ll eat these for the next few meals , just warm and eat!

Pizza Crust Cinnamon Buns

You know when you are just craving cinnamon buns and simply do not want to make it from scratch – well you do it Inkdgirl style (seriously , I do nothing from scratch)

I decided to make the kiddies a quick and easy dessert with what I had on hand. So this happened !

Pillsbury Pizza Crust Cinnamon Buns

1 can of Pillsbury pizza crust
3/4 cup of butter
Coconut sugar
Brown sugar

Cream the butter with the coconut sugar and cinnamon – I did not measure spices as I just kept tasting it until it was good !



Spray a baking sheet with Pam then roll out the crust. Add the butter mixture spreading it evenly , sprinkle a little more cinnamon on top


Roll up the crust


Slice and spread buns evenly on the baking sheet , sprinkle a little brown sugar on top


Bake at 350 degrees for about 12-14 minutes , let cool


Top with this Sugar Free syrup or icing



So freaking easy and yummy !

It’s Apple Crisp Season !

I typically am not a fan of apples , yeah you read that right . I don’t know what it is but I just would rather eat other fruit, but I love a fresh baked warm from the oven apple crisp and I have a super easy recipe for ya.

Step 1
Take 5-6 apples , peeled and sliced , place in a greased 8×8 in pan and add some Apple pie spice and 1/2 tbsp flour . Mix together




Step 2

In a separate bowl combine 2/3 cup of flour , 3/4 cup brown sugar , 1/2 tsp of cinnamon , 1/3 tsp of nutmeg ,2 cups of large flake oats and 2/3 cup of melted butter



Step 3
Use the oat mixture to top the apples , then drizzle agave syrup on top



Step 4
Bake at 375 degrees for about 30 minutes . Let cool then serve with ice cream or whipped cream.
