Fork tender chicken boobs in the Instant Pot! Stupid easy and ready in 15 min!
5 chicken breasts
Mrs Dash and garlic powder
2 tbsp oil
2 cups vegetable stock
Turn Pot on to sauté
Add oil to pot, sauté seasoned chicken breast in oil for about 2-3 minutes per side
Add vegetable stock to pot close lid and chose manual settings and set to 8 minutes.
Let Pot natural release , serve!
Stupid easy meal tonight!!!!
Man oh man I love my Instant Pot! This meal came together so fast and that’s how I like it. As a gastric bypass patient I cannot eat dry meat as it just kills my pouch and I get sick- this chicken came out so moist and tender you can cut it with a fork!
Here’s how it went down
Place 4-6 boneless skinless chicken breasts in the stainless steel pot ( I used 5)
Add in 1 cup of Honey Garlic sauce
Add in 1/2 cup water
Set instant pot to Poultry for 13 min then manually release when machine beeps done
Serve with rice and veggies and you have a complete meal
I don’t have the macro count for this but will add it later! Hey it’s chicken so it’s got lots of protein!
Yeah so um I’m not even going to give you this recipe because it was so very wrong!
This almost looks good, it was meant to resemble “fried chik’n” with gravy. If looks could kill!
It all started with me boiling up my mixture of vital wheat gluten, flour, spices and broth. It just looked gross so I thought ok once I bread it and fry it it will be ok.
See looks edible, up until you actually go to eat it. It tasted like bread, stringy bread with gravy. No no no.
I wanted to like this but no amount of gravy could make this edible. So this vegan is going to stick to plants and veggies without the “wheat meat” on the side!
So lately I’ve been tossing around a few different ideas on how to cut weight while staying strong and not losing muscle. I think I’m going to give this Ketogenic Low Carb High Fat plan another go.
I’ve been doing ALOT of research on it and I’m liking what I read. I have a Type 1 Diabetic daughter and significantly reducing her carb intake is the best thing I can do for her. It definitely won’t hurt me to cut back on some carbs too.
I’ve been making some pretty damn good meals lately and tonight’s is and will always be a favorite .
I took 6 chicken breasts, seasoned with a Southwest BBQ spice and wrapped in 1 piece of bacon. Cooked on MED heat in the oven the broiled to crisp up the bacon.
Then I sautéed asparagus in bacon pieces , basically cooking the asparagus in bacon grease!
Once played I topped the chicken with a mix of Caesar and Spicy Ranch dressing! Holy Yum!
My macros are set for 70-25-5 fats, protein, carbs
I’m still adjusting and my proteins and carbs aren’t quite perfect yet. I’ll get there. Follow along with me and I’ll let you know how quickly I tire or bore of this lifestyle- but for now it is All Bacon All The Time!
I love sammiches! I love carbs! I love gluten – but I’m trying to keep my diabetic daughter low carb so I’m on the bandwagon with her!
I had leftover crockpot chicken ( which is perfect for shredding ) so I made this today!
Buffalo Chicken Salad
I used about 2 cups of shredded chicken
1 celery stalk chopped
1 green onion chopped
4 tbsp Frank’s Buffalo Sauce
3 heaping tbsp Mayo
Now you can eat this stuff on anything, celery sticks, crackers or low carb tortillas.

Yum freakin oh! Here is the nutrional stats if you made 8 servings of just the sammich mix only.
I worked all day today so I wanted an easy quick prepare dinner for the fam jam. So I decided to make a pot pie, easy peasy style.
Here’s the steps to making this dish
Go to the grocery store and grab a rotisserie chicken and demolish it! Place all the meat in a baking dish, then cover the meat with frozen mixed vegetables. Then add 1 can of Progresso Chicken Pot Pie soup or cream of chicken soup.
Then top with a package of Country Biscuits
Cover with foil and bake at 375 degrees for about 25 minutes, remove foil and let cook another 5 minutes until biscuits are browned.
The kids will love this easy peasy one dish meal that screams comfort food!
I need to drop some serious lbs because I am still far too fluffy for my liking!
How am I going to do this?
Low Carb NOT no carb!
You see there are people out there that believe you must eliminate all carbs from your diet in order to drop weight – I highly disagree! I need carbs to function – I am a runner and lifter so my body needs these in order to effectively train.

I love beans and lentils and will be incorporating these into my meal prep.
Last year I wrote this post High protein low carb meal prep and it is one of my most viewed posts. It gives an idea as to what I plan on eating in a day.
I’m heading out to the grocery store now to stock up on eggs, avocado, sweet potato, lean deli meat, cheese and loads of animal protein ( I did stock up on quite a bit at Costco ).
My goal is to lean out , not worry about the scale ( haven’t weighed myself in weeks) and just focus on good ole clean eating with protein and vegg!

No this is not an original recipe , there are a million of them out there .
Here is how I make mine and it’s super easy peasy .
You will need
2 cans Pillsbury Country Biscuits
1/2 bag frozen mixed vegetables
2 cups diced cooked chicken
2 cans cream of chicken soup
In a bowl combine chicken , soup and vegetables. Add some pepper
Spray 2 muffin tins with Pam
Roll out biscuits and set in the muffin pan.
Spoon chicken mixture into cups. Roll out another biscuit , cut in half and top the pie to make a crust.
Bake at 375 for about 20-22 minutes
We like to eat these with gravy drizzled over top !
I am focusing on weight lifting more now and I need to fuel my body and make some muscle gains.
My love of carbs has gotten out of control lately. It is just too easy to grab a piece of bread and PB , toast or just a big ole sammich !
It ends now .
In order to make sure you are eating properly you have to plan for it . It takes just 1 afternoon to make enough meals to last you all week .
Here is what I made for this weeks meals, it literally took me about an hour to make all this food.
I boiled 10 eggs , baked 6 boneless skinless chicken breasts ( seasoned with Mrs Dash) , a pound of bacon , roasted spaghetti squash , baked 2 sweet potatoes and then a pan of roasted baby potatoes and carrots!
I will drink a protein shake post workout , water all day long and obviously multiple cups of coffee!
I keep bagged salad in my fridge at all times as well , that’s an easy grab and go meal – I have been known to eat it straight from the bag!

Here is a quick and easy meal that takes less than 15 minutes to make!
You will need
1 pkg of Flatout Foldit wraps
Pre cooked chicken
Mrs Dash Southwest Chipotle seasoning
Pre made Fiesta Dip
Tomato – diced
Cut up pre cooked chicken and place in a bowl , season with Mrs Dash – to taste
Add 2 heaping tbsp of prepared Fiesta Dip to the chicken , mix
Spray a skillet with Pam , place wraps in there on low
Now layer into the wrap , cheese , chicken mix , tomatoes and more cheese , fold
Cover and cook on medium heat for about 5 minutes per side , just enough time to melt cheese ! Serve with fresh avocado on the side
