Beef Barley Stew – Instant Pot Recipe

My addiction to this machine is real! You can cook anything in it! Today I made a big batch of beef barley Stew and here’s how it went down. Turn the pot on to Sauté for about 20 min and add 1 tsp oil, then 1 package of Stew beef, making sure you brown all sides then remove and put on a plate 


Now add mushrooms to pot, adding a little more oil if needed 

Remove when well cooked. Now add 1 whole diced onion, 2 stalks celery and 2 large carrots – all diced 

Cook until onion soft and translucent. Now add back into the pot the beef and mushrooms. Turn the pot to slow cook for 1 hour. Add 2 cartons of beef broth, 1 tsp each of basil, thyme and garlic powder. Add 1.5 cups of pearl barley or pot barley. 

Once the time is up it will keep warm on the “keep warm” cycle. 

Paleo Spinach and Chicken Soup

Here goes another epic crockpot soup !

Yesterday I devoured a deli chicken and one simply cannot throw out the carcass without making broth!

I boiled the bones , skin and leftover meat on the stove for a few hours on low , let it cool , strained it and picked the meat off it.

This recipe came together similar to my previous soup recipe found here

I placed the broth in the crockpot with the leftover meat then added these things

I cut up organic celery, carrots, onions , sweet potato and added in 1/2 carton of chicken broth , Italian seasonings , garlic powder and lemon pepper .

Let cook on low all day .

Typically I’d eat this with a big piece of bread , but not tonight .

Crockpot Sweet Potatoes

I love love love sweet potatoes but I don’t always have time to peel , dice and boil them . I do microwave them 1 at a time if I’m in a hurry , but when I want to make 4 or more I always use my Crockpot.

Seriously this is the easiest thing you will ever do ! Trust me

Take your sweet potato and wrap individually in foil

You don’t need to pierce them or anything .
Place in slow cooker and set on low for 6-8 hrs

When done you can do so many things with them , tonight I just smothered in butter and cinnamon post run – this is the best recovery food ever!

Crockpot Mexican Stuffed Peppers

This is NOT Paleo,eat clean or anything like that. What this is , Is Damn Good !!

You know I am all about easy meals for the family and you know I love my crockpot. So here is what went down today

Mexican Stuffed Peppers

I used
1 lb lean ground beef
1 bag Southwest blend veggies(black beans,corn onions)
1 pkg taco seasoning
1 pkg Knorr Mexican Rice
6 large peppers
Shredded cheese
2-3 cups water

Put the beef, frozen veggies,taco mix,rice mix and water in the crockpot on low for 5hrs , roughly

Mix it up, add more water if needed.
Then cut the tops off the peppers, or halve them

Once your meat/rice mixture looks ready

Like that , spoon into the peppers (use a deep dish pan to hold them up)

Heat oven to 375 degrees , too peppers with Tex Mex cheese and bake for 25-30 min

Eat!!

You can spoon on some sour cream if you like, and some crushed tortilla chips too!

I just devoured min straight out of the oven!

So delish!

Crockpot Beef Stew!

So I am sure you all haves figured out I love my crockpot. I own 3 of them, all different sizes and they all get used. Here’s what went down today

CROCKPOT BEEF STEW

2 pkgs of stew beef apprx 2 lbs?
1 sweet potato , peeled and diced
1 bag frozen mixed veggies
1 carton beef broth
1 pkg onion soup mix
2 tbsp cornstarch
1 pkg beef gravy
Salt,pepper,onion powder and garlic powder

Put everything in the crockpot on low for 6-7 hrs

This is a great throw together meal that takes literally minutes to prepare. Trust me, this will be a go to comfort meal for you! Yummo !
