This “recipe” makes 24 mini muffins and No Guilt! Eat and enjoy!
You will need
P28 Foods strawberry pancake mix 1/3c X 3
2 scoops Quest Nutrition strawberry protein
2 cups water
Mix together and fill greased muffin tins
Bake at 325 for about 10 min, here’s the calorie/macro info.
Now these aren’t sweet so if you want you can add some stevia to the mix.
This totally fits my macros and I love to eat these before a heavy lift day!
Today is back day and lots of pulling sets going down – deadlifts and rows so I need my mix of carbs and protein.
You can make a batch of these, freeze and just pop in the toaster to warm – FYI ! However I made these and ate them right away. All you need is
I used 1/3 cup of pancake mix and 1 scoop of protein, added in just enough water to make it smooth.
This made 3 pancakes
Once cooked I warmed up 1 tbsp of peanut butter, drizzled over top , poured my sugar free syrup (just under 1/4c) and sprinkled a few candy sprinkles. Here’s your macro breakdown

When it’s leg day and ya gotta get those carbs and protein in pre lift this is the perfect meal! You can basically eat waffles any time of the day right?

Here’s what you will need – I purchased the protein and pancake mix at Vitamin Shoppe FYI.
Missing from the photo is Buff Bake Birthday Cake Protein batter and fresh strawberries.
I simply took 1/3 cup of pancake mix and 1 scoop of Quest Protein and mixed with enough water to make it smooth consistency. Poured into my waffle maker, set on medium, and cooked for about 2-3 minutes.
Top with 4 strawberries, 1 tbsp Buff Bake and 1/8 c syrup.

This is not a calorie free dish but it’s pretty awesome. I made this mostly for the kiddos but I 100% know I will be taste testing !
Here is what you will need
5-6 peeled and sliced apples
1 tbsp of flour
2 tbsp of brown sugar
1 tsp of Apple pie spice and cinnamon
1 tbsp large flake oats
1/2 cup butter
1 pkg of Pillsbury Chocolate Chip cookie mix (refrigerated)
Place the apples in a 13×9 dish that has been sprayed with Pam, sprinkle with the spices, brown sugar, flour , oats and agave syrup
Melt the butter and pour over top
Now cut the dough into rounds
Layer on top of Apple mixture and bake at 350 for 45 minutes , keeping an eye on it
Remove from oven
Serve warm with whipped cream or ice cream
OMG – it’s pumpkin season again !!!!
I cannot even contain my excitement . I do not cook or bake anything pumpkin until I flip that calendar to September , it’s just my thing .
I am 100 % over the fact that we had a crappy summer this year so let’s bring on Fall! My most favorite time of the year . Hoodies , jeans , boots and pumpkin everything .
Even my dear old Starbucks rolled out the #PSL early this year . I cannot drink them there as they refuse to get Sugar free pumpkin syrup . Good thing my local cafe stocks it!
So back to the baking , very loosely termed baking is what I’m up too . The girls are back in school tomorrow , squeeeeeeee ( excited MOM ) and I wanted to make sure they had some yummy snacks for lunches . I decided on these to make –
Pumpkin Oatmeal Muffins
I totally cheated because I used a pre mixed muffin mix – yeah yeah whatever – I Do Not Bake !
These were my ingredients
Stupid easy right!
Simply mix the entire package of muffin mix – oatmeal flavor
1/2 can of pumpkin purée ( not pie filling)
1 cup of water
Pumpkin pie and apple pie spice
Drop into muffin tins , either greased or with paper . Top with large flaked oats.
Bake for 18-20 minutes @400 degrees
Let cool , then store in an air tight container !
