What to do with leftover chili?
Stuff it !
I always make way too much chili and most days I’ll just mix the leftovers with some rice and eat it in a wrap , but today I stuffed it .
Here is the stupid easy recipe
Cut tops off bell peppers ( I used 4 )
Scoop out ribs and seeds
Spoon leftover chili into peppers
Top with shredded cheese and put tops of peppers on
Put in a shallow baking dish with about 1/2 cup water and bake at 400 for about 25 minutes , until peppers are tender
Serve with a dollop of sour cream and eat up !
