Baking can be easy , trust me I am no baker!
Typically I despise baking because I suck at it , but now that I have a diabetic child in the house I need to bake. Hence this recipe was created.

You will need
3 small to medium ripe bananas
2.5 cups of large flake oats
2 eggs
1/2 cup coconut flour
1/2 cup sugar substitute ( Splenda)
1 small container of vanilla yogurt
1/2 cup milk
1 tsp baking powder and baking soda
1 tsp cinnamon
1/2 tsp nutmeg
Chocolate chips ( sugar free)

Preheat oven to 400 degrees
Spray muffin tins with Pam

In a blender place in this order bananas, yogurt , sugar , eggs , powder/soda, oats, spices, flour and milk- don’t add chocolate chips yet




As you can see I added bananas last – bad idea ! So follow the order listed!

Blend until well mixed


Fold in chocolate chips then fill 12 muffin tins , adding extra chips on top and bake for apprx 16-18 minutes .



Now of course these are best served warm
