Can we just discuss how good my kitchen smells at the moment!

This is a super easy Meatless Monday meal you can whip up in no time.

Here is what you will need

1 cup of dried lentils
1 box of quinoa
1 can of coconut cream
3 cups of water
2 cups of water
2 heaping tsps of cumin, garlic powder, curry powder and mustard powder
1 tsp chili powder
Salt to taste

Step 1
Bring 2 cups of water to a boil and add contents of quinoa box , cover and let simmer on low till fluffy


Step 2
In a separate saucepan bring 3 cups of water to a boil and add 1 cup of lentils , simmer on med until lentils are tender – approx 25 minutes


Step 3
Put quinoa into a large skillet and add can of coconut cream and all spices except salt . Simmer on low



Step 4
Drain lentils and add to quinoa


Now just cover and let simmer on low for a few minutes to allow spices to absorb.

Add salt to taste
