This is a great protein – veggie packed cold salad just in time for Memorial Day weekend( yes I’m Canadian but I love my US friends)
Easy to make and tastes delicious , here are the deets
You will need
1 bottle of Kraft Greek and Feta salad dressing
1/2 container of feta cheese , crumbled
1 tomato , diced
1/2 cucumber diced
1/2 red onion diced
1.5 cups cooked quinoa
1/2 small can of chickpeas , rinsed and drained
I always keep tubes of herbs in my fridge ! Tip
I made this quinoa ahead of time and just kept it in the fridge until I was ready to create.
Simply mix all the ingredients together and let chill covered in the fridge until you are ready to serve. Top with fresh cilantro when serving.
