Now that I am back to my meatless ways I know I need to get adequate protein intake via other sources.
Quinoa is a great protein to include in your meat free lifestyle as it packs a punch. 7g grams of protein in a single serving.
Yesterday I made up a batch if this expensive ($8) bag of sprouted organic quinoa

So easy to make and no pre rinsing ! Simply boil 2 cups water , add 2 cups quinoa and let simmer 10-15 minutes. I put the cooked quinoa in the fridge until I was ready to create , hence breakfast was born!

Coconutty Quinoa Oatmeal

1 cup cooked quinoa
Splash of coconut milk, unsweetened
Unsweetened flaked coconut , to your desire
Handful of chopped walnuts
Handful of sliced almonds
Little bit of sugar free chocolate chips
Agave syrup

This is the agave I use.

Just microwave the quinoa and milk for 2 minutes or until warm enough , then top with remaining ingredients.
Eat!

So good and I will pack some hard boiled eggs for my mid morning snack .
Get your protein in early in the day and rev up that metabolism!
