The other day I had an idea.

Yes I did and it involved my beloved crockpot . You know I love that thing. I was thinking Crockpot Coconut Chicken- sounds easy right!

Here’s how it went down
Coconut Curry Chicken

You will need

4 boneless skinless chicken breasts
1/2 onion diced
1 inch of ginger
3 cloves garlic minced
2 cans coconut milk
1 chopped carrot
1 tsp of cumin and curry

Place chicken in crock and cover with diced veggies

Let cook on low for 6 hours and serve over brown rice.

Here’s the FAIL part, I have no idea how it turned out because being a busy Realtor I never made it home for supper. I asked the family if the liked it and pretty got , “I didn’t eat it , it looked gross”… Nice eh!

So I just pulled the chicken out of the sauce to use for the next day, here’s where it gets Better!

I saut̩ed those breasts in coconut oil on low, added a Cajun spice and BBQ spice blend and warmed them through. Placed them on a bed of mixed spring greens, chopped apple, dried cranberries and chopped walnuts. Drizzled with a balsamic dressing and BAM Рyou got one heck of a salad !!

All that salad needed was some crumbled feta and it would have rocked! I’m pretty sure I will be eating this again today because it’s my new favorite thing!
