Today was a rest day for me so that meant I did not want to slave away cooking all day. My trusty crockpot came out! On the menu , crockpot Broccoli Cheese Soup

I made this with 1% milk tonight for the kids, you can sub in almond or soy milk. You can also sub in Daiya for the cheese.

I love roasted vegetables and so do the kids… If you want them to eat veggies, do this!! Trust me , they will love it!

I simply cut up veg , pour olive oil over them, sprinkle with salt and garlic powder! Cook in a 400 degree oven until veggies are crisp.
