This recipes will knock your socks off, vegetarians and carnivores! I made both because I have carnivores in my home. Here is how it all went down



6 bell peppers with the tops removed and guts pulled
1 lb lean ground beef ( for the meat one)
Onions diced
Carrots chopped
Celery chopped
Mushrooms sliced
Tops of peppers chopped
Italian seasoning
Salt and pepper
1 jar of tomato sauce or pasta sauce
1 box of organic quinoa , prepared as per box instructions

In 2 pans, sautée in coconut oil the veggies in 1 pan, and the beef and veggies in a different pan.



Once both dishes are cooked, add seasonings, pasta sauce… I used this kind


Mix up the quinoa, veggie mixture and pasta sauce.

Next, get out your crockpot and add about 2 cups of water to the pot. Stuff the peppers with the mixture and place into the crockpot.



Add a little dollop of sauce to the tops of the peppers, cover and cook on low for 3-4 hours or until peppers are tender. About 30 minutes before dish is done, shred some cheese on top and cover to melt cheese!

  2. This sounds great. My Hubby loves stuffed peppers and I just found out I’m diabetic. I thought this would be great for dinner. I was hoping you could give me the nutrition facts. or at least hoe many carbs and calories. Thank you.
