This recipes will knock your socks off, vegetarians and carnivores! I made both because I have carnivores in my home. Here is how it all went down
6 bell peppers with the tops removed and guts pulled
1 lb lean ground beef ( for the meat one)
Tops of peppers chopped
Salt and pepper
1 jar of tomato sauce or pasta sauce
1 box of organic quinoa , prepared as per box instructions
In 2 pans, sautée in coconut oil the veggies in 1 pan, and the beef and veggies in a different pan.
Once both dishes are cooked, add seasonings, pasta sauce… I used this kind
Mix up the quinoa, veggie mixture and pasta sauce.
Next, get out your crockpot and add about 2 cups of water to the pot. Stuff the peppers with the mixture and place into the crockpot.
Add a little dollop of sauce to the tops of the peppers, cover and cook on low for 3-4 hours or until peppers are tender. About 30 minutes before dish is done, shred some cheese on top and cover to melt cheese!
